It’s a bit of a hassle, but pre-boil the noodles. To get that old-fashioned chewy texture, this step is essential.
You can skip boiling the noodles, but then it won’t have that Neapolitan-style finish—just the “style”. The wateriness is a problem.
With Hotcook, you can boil the noodles automatically, which is convenient. I usually boil them the day before and just add them on the day.
Add the following ingredients:
On the Hotcook, select Noodles → Neapolitan-style pasta.
By making the Neapolitan sauce separately, the sauce boils and becomes richer.
Noodles → Neapolitan-style pasta takes about 20 minutes, but stop it 5 minutes before completion and add the noodles. In my case, I also add bacon at this time.
After simmering for 15 minutes, it looks like this.
It’s not a problem to precisely simmer the sauce for 20 minutes, add the noodles later, and extend the time.
That’s it. You can also add cheese or other toppings to your liking. I personally like the slightly cooled Neapolitan, like the one served in school lunches, and this method achieves that taste perfectly.
